Yuki no Bijin

Sake

Today I would like to introduce Yuki no Bijin new sake, fresh of course.

This is a brewery located in Akita City, though it is confusing with Yuki no Bousha, which is a larger brewery in the same Akita area.

The annual production is not so large and the number of liquor stores where you can buy it is limited. If you are lucky, you can even buy sake for the fair. The price is a little expensive (about 2,700 yen), but the taste is good enough to justify the price.

Today’s sake is a fresh sake.

The color is clear with a slight tinge of yellow, but it is quite close to clear. At the moment of opening the bottle, it was overflowing with  gas.

The taste is quite sour. And yet the balance is also quite good. It’s sweet, but not so sweet that it interferes with the meal. The flavor is just right.Today I made a nabe with chicken thighs, leeks and Chinese cabbage, and it goes very well.Akita is famous for Hinaijidori, so it would be great to pair it with a Kiritanpo nabe with Hinaijidori!

For your reference, I have linked my own characteristics to the graph below. It is fun to see how it compares to the Sharaku I drank last time.

sweetness:4/5
umami :5/5(fifth category of taste, corresponding to the flavour of glutamates)
fruity:3/5
Acidity:4/5
Balance:4/5
