The aroma is very much like sake with a strong koji aroma.It is quite yellow.There is no acidity.The taste has a strong sweetness like that of wasanbon at first, but it is soon followed by a dry sharpness.
I would like to pair it with ma bo-doufu (bean-curd soup seasoned with red pepper).I got it from a fellow expatriate in Sichuan province.However, I forgot to buy minced meat.Oh well.I made it with only tofu and green onions.In Japan, it would be very hot, but I’m used to it in Shanghai, so it tastes good.
