Sake

This is Junmai Ginjo Nama Sake from IPPAKU Suisei.

Fukuro-turi means very labor-intensive process in which sake is collected by dripping it drop by drop from a bag.I would like to pair it with a French cheese sold at Maruetsu, a grocery store.

The mildness of the cheese will digest the taste of the cheese when paired with it.Well, but I think smoked cheese would go better with it.The spiciness of the raw green onions in the spicy stew again, and the amazing luxurious harmony spreads in your mouth.Although it is dry, it is a junmai ginjo, so it still has a sweetness, and the sweetness of the junmai ginjo seems to envelop the spiciness of the leeks.

It is a very good sake to pair with spicy food.However, I have not seen it in many restaurants, so I think it would be best to drink it at home with stewed leeks.Anyway, it goes very well with spicy dishes.

As it happens, I have some grilled pork shoulder that I bought at Maruetsu store yesterday.Let’s see how it goes with mustard.First of all, I regretted why I didn’t combine it with mustard when I ate it yesterday.And then the taste of IPPAKU Suisei against the spiciness of that mustard. At first, the many flavors are confronted with in the mouth, but I feel that they gradually converge with the sweetness of the pork oil.

The sake seems designed to be paired with dry snacks.
