Hyoko jyunmai fresh

Sake

Well, today we have a junmai ginjo from Niigata Prefecture called Hyoko. The brewery that makes this sake is located near Mount Yahiko and Mount Kakuda in Niigata City. I was born in Niigata City, and my elementary school’s school song included Mt. Anyway, it is a Junmai Daiginjo. I am looking forward to it.

 

The alcohol content is 16 degrees and, the rice is polished to 50%. By the way, the address is in Nishiura-ku, Niigata City,where a lake called LakeHyoko is a place where swans fly in.

The color of the sake is cloudy with yellowish tints, because it is made from origami. You can see gas inside. Now, let’s open it.

 

The aroma is fruity. I guess you could say it is peachy. It is quite sweet but has a sharpness. This is quite sweet and a little bit snake so to speak in wine, this might be a liquor that belongs to this full-bodied category. It is quite a sticky liquor. It is a very long lingering sake. It has a sweetness, but it is not sweet, and the spiciness comes through. I think it is a very good sake. As expected of Niigata, my birthplace and hometown.

There is also a hint of gas. Peach flavor, very fruity. The gas is only subtle and not very strong. It is delicious.

Today I will try it with bonito sashimi, garlic, ginger onion, and green onion. I will match it with that. The spiciness combined with the sweetness of the sake is very good.
